Barbeque
Grilling –
We started with Rosemary Focaccia bread dipped in olive oil with herbs
... Yum - it was hard to not fill up on it. It was washed down
with a little wine/or beer that people brought (BYOB). We had an offset
smoker running charcoal and apple wood and a gas grill with a searing
burner. The corn for the corn salsa was roasted and smoked in the offset
smoker before being mixed with the other ingredients giving it a nice
smoky flavor. Sweet potatoes were foil wrapped and baked, Veggies
(yellow squash, zucchini, mushrooms, onions, etc. were grilled on the
searing burner. The chicken was finished in the gas grill, while the
ribs and brisket were in the smoker. There were three sauces made on the
stove: Kansas City, Vinegar and mustard and Texas Style - after having
each a couple of times, I still couldn't decide which I liked better -
they were excellent! After all that, desert was served, a Raspberry,
Blackberry, Strawberry Trifle. It was light, delicious but
unfortunately, no one was able to handle a second helping. The
class left stuffed and happy around 10 PM.
About our other cooking classes:
The first two classes were fantastic! See some of the
comments here.
Classes are for cooking with economics in mind making bread,
desserts, appetizers and entrees. We also look at how to take one item
and use it for
three dishes.
Cost for adult classes generally vary from $55 to $65 per person depending
on what is being served (you expect to pay more for a steak than for
chicken!)
We bring nutrition into the equation and consider the foods we eat
and the value of freshness. However, this class is practical, so will
talk about where we purchase our Buckwheat Sprouts and
other local
food.
We would be amiss if we didn’t include cooking for children. Here
they learn how to read a recipe, cook a simple dish, roll bread
sticks, etc. No one younger than seven, please.
Also, if you'd like to see a class on a particular subject,
let us know:
Some ideas we are considering are:
A variety of ethnic foods
The other white meat
For Teens
Wine & appetizer pairings
We can handle groups as well, so just let us know your needs. Signing
up must be a commitment with a credit card to hold the seat as we will
close the class once we have reached capacity.
Bye the way, in the
left column of this page you will find student comments about the
classes and links to pictures from past classes. You will find more
